Caramelized Cauliflower Taco

endive boat, cucumber and tomato salsa crudo, cilantro-lime emulsion

Optional drink pairing Bitter Gimlet, vodka, grapefruit juice, lime, simple syrup, muddled cucumbers

Mushroom Pate

pine nut lavash, coconut “bacon”, blueberry thyme jam

Optional drink pairing Fun-Guy, porcini-infused bourbon, cynar, carpano antica vermouth

Spaghetti Squash Polenta

caramelized leek, winter greens, chanterelle mushrooms, tomato caviar, vegan bechamel
